Spring Entertaining Luxe For Less Menu
I’ve created a spring entertaining ‘luxe for less’ menu with Coles supermarkets, and here’s what I put together. It’s a three-course menu that you can serve for a group of 6 at home that comes in around $15 per serve. It’s perfect for entertaining as every recipe can be made and prepped in advance and it’s also a waste not menu where the leftover ingredients of one recipe can be turned into the next.

- Whipped Ricotta toasts
- Spring Salad with Sugar Snap Peas, Peas, Cucumber, Radish and Whipped Ricotta
- Whole Roast Chicken
- Peach Panzanella salad
- Fried Wonton Mille Feuille with Mango Crème Pâtissière

Luxe for Less Menu Shopping List
- 1 coles sesame seed baguette
- 1 tub (375g) of ricotta
- 1 bottle (500ml) of olive oil
- 1 bag (150g) of sugar snap peas
- 1 bag (1kg) of frozen peas
- 1 bunch of radish
- 1 lebanese cucumber
- 1 bulb of garlic
- 1 block (250g) of butter
- 1 bunch of mint
- 1 bunch of basil
- 1 punnet (250g) of cherry tomatoes
- 1 packet (200g) of Coles 4 leaf salad leaves
- 1 ball (200g) of buffalo mozzarella cheese, torn or burrata
- 1 red onion
- 2 yellow peaches
- 1 cup of vegetable oil
- 1 packet (250g) of wonton wrappers
- 1 mango
- 1 lime
- ¾ cup of caster sugar
- ¼ cup of plain flour
- 2 tbs of cornflour
- ½ cup of milk
- 2 eggs
