2 Ingredient Flatbreads with Beetroot Hummus & Muhammara

How to make the easiest Lebanese flatbreads with a trio of dips!

2 Ingredient Flatbreads
Makes: 16 small flatbreads
Ingredients
- 2.5 cups of self raising flour, sifted
- 2 cups of Greek yoghurt
Method
- Combine both ingredients in a stand mixer and mix using a dough hook attachment. You want to knead the dough for roughly 5 minutes until it turns into a smooth dough, but still quite runny.Â
- Using a silicone spatula, turn the dough onto a floured benchtop.Â
- Now knead the dough with your hands, and shape it into a ball. You can add more flour if it's too wet.Â
- Grab another bowl, and drizzle with olive oil. Then transfer your dough into the oiled bowl, drizzle with some more olive oil to ensure the whole dough is coated. This will help it stay moist and to ensure it doesn't dry out and form a skin while resting.Â
- Cover with a tea towel, and leave in a warm spot for an hour.Â
- Flour your bench top, and turn the dough onto the bench.
- Cut your dough into 10-12 sections, making sure to dust your knife so it doesn't stick to the dough.Â
- Once you have cut all of your dough balls, use your hands to shape and flatten into a rough circle. Add more flour if it's sticking to the bench top.Â
- Once you have it as thin as you can, throw them into a hot pan until they are nice are charred.
- Best served hot and fresh out of the pan!
Hummus
Makes- 2 cups of Hummus
Ingredients
- 1 can of chickpeas, drained but reserving the juice (aquafaba)
- ½ cup of Tahini
- 1 teaspoon of Cumin
- 2 cloves of Garlic
- 1 pinch of Salt
- 1 tablespoon of Olive oil
- Juice of 1 Lemon
Method
- Add all ingredients into a blender, and blend till smooth.
Beetroot Hummus
Makes- 2 cups of Hummus
Ingredients
- 1 can of chickpeas, drained but reserving the juice (aquafaba)
- ½ cup of Tahini
- 1 teaspoon of Cumin
- 2 cloves of Garlic
- 1 pinch of Salt
- 1 tablespoon of Olive oil
- Juice of 1 Lemon
- 1 cup of pre-cooked beetroot
- 3/3 cup of goats fetta or labneh
- A pinch of cracked pepper
Method
- Add all ingredients into a blender, and blend till smooth.
Muhammara
Makes- 2 cups of Muhammara
Ingredients
- 2 roasted capsicums
- ½ cup of Roasted Walnuts (roasted in a dry pan for 5 minute son medium)
- ½ cup of panko breadcrumbs
- 1 teaspoon of cumin
- 1 teaspoon of sumac
- 1 teaspoon of smoked paprika
- 2 cloves of garlic
- 1 teaspoon of chilli oil, you can substitute this for Chilli Flakes
- 2 sprigs of parsley
- 1 tablespoon of pomegranate molasses
- 1 tablespoon of olive oil
- Juice of 1 lemon
 Method
- Add all ingredients into a blender, and blend till smooth.
